JOB TITLE: BAKER – LARGE CAMP DEPARTMENT: KITCHEN DIRECT REPORT: CHEF
PURPOSE:
A big part of ARAMARK Remote Workplace Services is our catering and food service. The importance of a clean and well-maintained kitchen should never be underestimated. First impressions of any camp are made when the customer or visitor opens the door and steps inside. Pride in quality food service is a crucial aspect to all clients. Reporting to the Chef, the Baker position is responsible for the planning and preparation of a large variety of baked goods as per ARAMARK Remote Workplace Services requirements.
PRIMARY RESPONSIBILITIES:
1. Meet daily with Chef to discuss menu preparation and production strategy. 2. Coordinate and be responsible for the daily preparation, production, handling, storage, rotation and serving of all baked items. These items will include, but are not limited to, breakfast pastries (muffins, cinnamon buns, etc.), lunch box pastries (cookies, squares, etc.), and main meal desserts (cakes, puddings, pies, etc.) 3. Provide supervision, guidance and support to all ARAMARK Remote Workplace Services employees scheduled to work during the night shift. Positions that will be supervised include, but are not limited to: Breakfast Cook, Sandwich Maker, and General Helper. Supervision responsibilities will include: training and development through coaching and mentoring, delegation of assigned job tasks, direction and assistance with personnel problems, and employee evaluation and performance management. 4. Prepare all baking items as per menu plan provided by the Chef. Ensure adequate quantities of the menu choices are prepared as per the menu plan, and follow all production quotas as set down by the Chef. A good rule of thumb is 8 to 10 pieces of pastry plus on piece of main meal dessert for each client. Fresh bread or buns are required at least 3 times a week. All items produced must be a variety of baked items. 5. Ensure food is prepared as close to consumption time as possible. Prepare and serve all food items in accordance to HACCP (Hazard Analysis Critical Control Point) and Food Safe standards. 6. Ensure proper storage and rotation of all food supplies as per HACCP and Food Safe standards. Defrost all food supplies required for food preparation by HACCP and Food Safe standards. 7. Ensure all expired food supplies are properly disposed of as per HACCP and Food Safe standards. Empty and disinfect all garbage containers daily. 8. Assist in the unloading and storage of food supplies in accordance with ARAMARK Remote Workplace Services Food Service standards. 9. Ensure menu boards are updated daily. 10. Make sure that the lunch room area is set up properly for clients. Ensure that all items are fully stocked in lunch room area. 11. Ensure personal hygiene and work area is clean and sanitized at all times. Ensure that kitchen areas and equipment are cleaned as per ARAMARK Remote Workplace Services cleaning schedules and Food Safety standards.
SECONDARY RESPONSIBILITIES:
1. All Bakers are responsible for supplying and use own recipes. 2. Comply with all HACCP, Food Safe, and WHMIS standards. 3. Comply with all ARAMARK Remote Workplace Services policies and procedures. 4. Any other duties as assigned by Chef, Field Supervisor, Human Resources or Operations Manager.
STAFF SUPERVISORY/MANAGEMENT RESPONSIBILITIES:
Bakers are responsible for the coordination and supervision of all kitchen staff working on a scheduled night shift. Numbers of employees under supervision are dependant upon the particular ARAMARK Remote Workplace Services facility assigned, and fluctuate to match business needs.

INTERACTION WITH PATRONS AND PUBLIC:
The Baker provides respectful and courteous service to all ARAMARK Remote Workplace Services clients and employees. Interaction and communication with clients and employees may be carried out by telephone or in person. PHYSICAL DEMANDS:
Bakers must perform a variety of physical duties within the position. A list of general physical requirements is provided below:
• Must be able to lift, carry, or pull up to 50 lbs. • Ability to climb ladders, step stools, or stairs. • Do a combination of standing, walking, squatting, or kneeling. • Ability to perform repetitive hand work, which requires full use of both hands. • Ability to perform work with arms at full length. • Must be able to work with arms above shoulder height.
WORKING CONDITIONS AND ENVIRONMENT:
All Bakers are required to work on a rotational schedule. Hours worked will transpire during weekdays, weekends, and general holidays. This position may be required to work split shifts and/or night shifts. Bakers generally work in a very remote location where there is limited access to and from the ARAMARK Remote Workplace Services facility with extended travel to and from site. Travel to and from site will be provided by ARAMARK. Bakers will be required to perform duties in indoor and outdoor working conditions. Bakers must be able to work in cold/freezing environments (fridges) or hot environments (kitchens).
KNOWLEDGE AND SKILLS REQUIRED:
1. Must possess good communication, interpersonal and organization skills. 2. Must be able to work effectively and efficiently supervised and unsupervised. 3. Must be able to operate all types of kitchen machinery (e.g. Oven, fryer, etc) 4. Must be in good health and physical condition to perform duties assigned. 5. Must have 4 or more years experience in a related field of work, preferably a camp catering environment. 6. Must be fluent and literate in the English language. 7. Journeyman or Red Seal Certification in the Baker trade or equivalent is mandatory. 8. WHMIS (Workplace Hazardous Materials Information System) certification is mandatory. 9. Fist Aid certification is an asset. 10. HACCP (Hazard Analysis Critical Control Point), Basic, and Advanced Food Safe training job or site specific. 11. Knowledge of ARAMARK Remote Workplace Services policies and procedures.
